1 pound carrots (6-7 carrots)
1/2 cup low fat mayonnaise
1 1/2 cups chopped pineapple, drained
¼ cup raisins
Pinch of salt and pepper

| Directions |
- Peel and shred the carrots. Set aside.
- In a large bowl, combine the mayonnaise, pineapple and raisins.
- Add the carrots to the bowl. Mix well.
- Add salt and pepper to taste.
- Refrigerate until ready to serve.
- Refrigerate leftovers.

1 cup flour
1 teaspoon baking powder
1 cup oats
1 teaspoon cinnamon
1¼ cups shredded carrots
1½ cups raisins
½ cup applesauce
¼ cup vegetable oil
½ cup honey

| Directions |
- Preheat oven to 350°F
- In a large bowl, stir together flour, baking powder, oats cinnamon, carrots and raisins.
- In a small bowl, stir together the applesauce, oil and honey.
- Mix wet ingredients into dry ingredients.
- Drop by teaspoonful onto 2 greased cookie sheets to make 36 cookies.
- Bake 10 minutes. Enjoy!
- Each serving is 3 cookies.
